While I might have done much harder, only three main things I can think of are completing Darker Side in Super Mario Odyssey, completing the True Arena in Kirby Superstar Ultra. (And getting very close on Triple Deluxe) and completing Hexagon on Super Hexagon. (That one was pretty hard) More minor, but still hard are completing the Genocide Run in Undertale and Cuphead on normal difficulty. What are some of your hardest achievements outside of Geometry Dash?
Edit: I remembered that I beat the Dungeon Guardian in Vanilla Terraria once.

I beat New Super Mario Bros. Any% in about 45 minutes.
IRL I got a 12 minute, 4 second 2 mile time when running for my track team.
Those are pretty cool I guess.

I beat Kaizo Mario 1 and 2 back when I was much younger. These hacks are very difficult, so they require a lot of patience and trial and error.

NG+2 no hit run against Slave Knight Gael in DS3 with a bandit knife. I’ve also done class gear only runs of the entire game with the Thief, Assassin, and Cleric classes while keeping my weapon upgrades to +3 and a SL1 run of the game. Obviously did the DLC across all of those.

When I played Minecraft I got over 500 wins on Mini Walls in Hypixel (that was mostly farming though)
Probably my most frustrating achievements were in Super Mario Galaxy 1 and 2, notably Luigi’s Purple Coins and the golden chimp stage with the shadow Marios following you. God that one was bad.
Most recent hard thing I did was beating the Slime God with Pre-Slime God gear and no cheese items in Terraria Calamity (expert mode).
I also got a full 100% in Kirby Super Star Ultra, which included every single Helper to Hero helper, and that took forever. Luckily I did every single helper during a plane ride to Florida which was a 6 hour period of just grinding helpers.
I don’t think I really have a clear hardest achievement though

haven't done much impressive shit but i did a speedrun of the original kirby's dream land once and got like 13:33. i used to do other kirby speedruns actually, but not a lot of them were anything special. i actually still have my speedrun.com account but it's still named rock and i can't change it smh
