I just saved. If I click unlink account, I can sign back in on the same device, right? The only things that will be deleted are the things you did after you saved, am I correct?

I think so? I’m not really sure how it works and I don’t necessarily want to find out.

Also game support isn’t really the place to ask all these questions. The simple questions board is more appropriate.

OT: yeah i think so. it only saves what you did before saving. if you did stuff (getting stars, demons etc.) and loaded the things you just got would be deleted

Let me reword my question: Unlinking your account is the same as signing out, and when you log back in and load, you'll be back where you were after you saved. Is that true?

So yes, unlinking and loading loads your last saved progress. I recommend you save after ever session you achieve something because data loss is not fun.
