I like that idea! In fact I think it would be better if there would be TWO fps options:
1 for the game FPS (this is the hz that the game runs at) 1 for the video FPS (this is how often the game draws to the screen)
So if you play GD on a 60hz potato like me, I can set the game FPS to something like 120 while keeping the video FPS at 60. I would get all the benefits of 120hz with no extra burden on my GPU.

Added to 2.2's GMD wiki article ;3; This option would be great for easing drama over the bypass in the future; however it will have no apparent effect on mobile players like me.

The game FPS would control how often that is run, so if you set that to 120, then it will basically be 120fps. If you put the function to render everything inside that main loop, then you are basically saying that it renders every frame. However, if you set the game fps to 120 but the video fps to 60, then it will only render everything on every second tick. So it only renders 60 times per second while the game is actually updating 120 times per second. Now I'm not saying that I'm completely sure GD works this way, but it is very likely.
