Yesterday I saved my data and deleted the game. Then I redownloaded the game and loaded my data and I'm missing some stars and like 3 demons. Anyway to fix it? If not I'll just noclip those demons.

Try reloading your data. The only thing I can really think of is that reloading it earlier might have removed some unrated demons/levels. Probably just the data loss bug though. Good thing it wasn't that much data.

It might have to do with unrating of levels. Only loading data will refresh your data thoroughly by looking through levels completed and giving the star, demon, coin etc. amount after loading. So you might have completed some demons and levels, and they later got unrated, and then you saved, and then you load, and then the game thoroughly checks your levels completed. This means you lose a few stars after loading your cloud. That's happened to me. Sometimes it might bug out, like a level got unrated before and got rated again later, but the game didn't count it as rated and not give you stars for it. An easy fix for that is to go to the level that the game misassumed, and force the game to load the level, realize it's rated, realize it's completed, and then give you those stars again. But that might also be hard, If you don't know what level it is. This is the best explanation I could come up with.
