GD’s taking up a LOT of room now, and it’s not because of the songs. I reckon it’s all the level progress I’ve made on many different levels. How can I delete my progress?

You don't have to remove your progress, just delete saved levels. It keeps the progress but not the level's data itself.

Pretty much what Dragon said, except most of what is taking up space is likely your downloaded songs in GD. Songs take up multiple MB of space per song and that can rack up some GB after a while. Just delete all of your saved songs and all your saved levels.

Yeah, each song can be between 3-15 megabytes. However, if you have 200 saved levels, it will take about 20 megabytes, so that comes out to only about 100 kb per level. And you might have progress on a few thousand levels in GD, but keep in mind that the progress value is just a single number, so even if you had progress on 10,000 levels, it might only be 10kb in size.
tl;dr you say you've determined that it's not the songs that's taking up the space (I'll take your word for it), then it's most likely the saved level data. I recommend saving your data to the Cloud (which you can do in GD), and then deleting your local data. Also, delete any custom levels or saved levels that you aren't using.

It’s weird, because I delete all my songs and saved levels and the storage space GD is taking isn’t dropping

If you have too many created levels, that often created a lot of issues. Delete all of the ones that are no good to you.
