I don't consider what I did before Insomnia "playing the game", per se. It was my first 1.9 or later demon (besides than Syobon Action) and my first Demon that was impressive to my friends. I believe the day I completed it was January 2nd, 2016.
Around a year after I originally started playing GD, I beat DeCode (Medium Demon at the time) and was pretty happy with myself.
Deadlocked in April-May 2016, don't really remember when.
Ditched Machine on June 23rd 2016. Spontaneous as all hell. I remember getting 97 and being "aw that's kinda bad" then beating it 6 attempts later. Still one of my favorite 1.9 Demons to this day.
Then, I sucked. I stopped beating Demons for no reason until October, and it was pretty much only due to my lack of patience. I didn't even do anything super impressive until Mechanical Showdown in early 2.1. I quit in March but returned in May.
July 2017 I beat Ultra Drivers, only 36 hours after I started practicing. This was my first true Hard Demon and I was shocked to have done it so quickly. I legitimately felt like I could do anything.
I did Lets Bounce a few weeks later. Don't recommend it, wasn't the best thing. Still my third hardest as of today, however.
I didn't get any new hardest Demons for a while, I mostly filled up my top 10 hardest with Hards and Mediums like Radioactive and FuryFunk. Also got into Star Grinding, and still haven't gotten out of that phase. Throughout the months during all of this I practiced BuTiTi II and The Shredder on and off, I haven't beaten BuTiTi II yet, but The Shredder on the other hand...
On January 13th, 2018, I completed my hardest Demon by far, The Shredder. After 8000 attempts, not including deleted copyables, I had completed the level that gave me so much pain from it's hard timings and tight spaces. If I were to say the level that I have the largest Love/Hate relationship with, it's definitely this monster.
I plan to beat Lunatic Doom Machine sometime soon, I don't know if it will be my hardest or not.

So, here's my history of hardest demons:
The Lightning Road was my first Demon.
Then shortly later, I beat Clubstep and remains the main level with the most attempts (In fact, my first post on my profile was announcing that I beat Clubstep)
Then a couple months later on January 15, 2017 (I remember because it was one day before 2.1 was released) I completed Deadlocked, definitely my second largest struggle on a Demon ever.
After that, I just did a bunch of Easy Demon grinding.
Then forever later, I tackled Sidestep and began progress on the Demon Gauntlet (I gave up when I reached Vibration) This was the first Demon I considered harder than Deadlocked. (I had beaten DeCode prior but I don't consider it harder than Deadlocked)
And about a month ago, in only 2 days after practicing, I beat Ditched Machine! (Which I think is seriously overrated in difficulty, yet I consider it harder than Sidestep)
I've currently been trying to beat Nine Circles (80%) and Forsaken Neon (86%) and I think I'll beat Forsaken Neon first since I have been struggling on Nine Circles forever (Remember when I said Deadlocked was only my second largest struggle?) and FN is more fun anyway. I still consider FN harder and I have no idea what's going on with NC. I guess all those 79%-80% fails lost my motivation :V.

All I remember is basically this: The Lightning Road > Some other Level > Crescendo > Clubstep > ToE2 > Deadlocked > Nine Circles (Airtime and Takeoff by Nasgbub in here somewhere as well) > Windy Landscape > Night Terrors > Cataclysm
Somewhere mixed in there are about 75 other demons that I can't be shitted to remember cause they're all boring.

First, of course, it was the Nightmare, as most people's first demons should. Followed by that came ToE II, which was quite a challenge and took me a solid 1 - 2 months (can't remember exactly). Then 2.0 was released, and, of course, I took on Deadlocked. That took me around 3 months. After that, it was just a lot of blurred time which featured me completing a lot of NepTune's v2 levels, including Clubstep v2, Electrodynamix v2, and Hexagon Force v2. Finally, this past summer, I completed what is now my hardest level, and the finale in NepTune's v2 series - ToE II v2. Honestly, ToE II v2 will probably remain my hardest level forever, as my motivation in GD is solely within the creating community, so this is pretty much where the path ends.

Technically, my first and hardest demon is Lost Legends, but I had beat it when it was completely free, so it doesn’t count as anything really.
The first demon I ever beat was X by TriAxis. Definetly an odd start. It remained my hardest for a while until I beat...
Syobon Action. Everyone could agree that this is harder than X, though it didn’t take me nearly as long to beat. I got tired of people telling me that the things I best aren’t as hard as Syobon Action, so I then took 850 attempts out of this game and put them into...
Dead Moon by HobbyBoat. This is definetly harder by Syobon Action (though maybe not by much). It’s a really weird and really buggy level that I beat in a single day, with around 2 hours of play time.

Platinum Adventure -> TOE II -> Deadlock'ed -> Airtime -> Ultra Drivers -> daily level #1 -> daily level #2 -> daily level #3....->etc
some daily levels are srsly worse than beating demons

Heres my hardest demons for now The Lightning Road was my first demon then a couple of days later i beat the Nightmare i consider The Nightmare to be a little bit harder than The Lightning Road
Then a couple of weeks later i beat Speed Racer and that remained to be my hardest demon for a couple of months
until i beat infinite circles that level was a jump in difficulty compared to speed racer and it still remains my hardest demon to date
im currently trying to beat my next hardest demon which is clubstep (80%)
